The Rustic Artisanal Cheese

The Versatility of Cheese

Grilling Cheese

The Paillasson from l'Isle d'Orléans* in Quebec is an artisanal frying cheese that should be eaten hot!   Such as...

  • Pan sear it over medium heat
  • Grill it on your BBQ
  • Grill on upper part of a raclette stove, or
  • Bake in the oven

Top with honey, balsamic glaze or pesto.

* This was the first cheese ever made in the Americas, back in 1635!

Cast Iron Raclette

Did you know you can make a quick Raclette using a cast iron pan! (or any oven ready pan)

Simply add...

  • Sliced baked potatoes
  • Our delicious Migneron de Charlevoix cheese, sliced
  • Top with jambon blanc
  • Finish with herbs.

Bake until the cheese is melted. Enjoy with onion confit or red pepper jelly.

Baked Feta

Place our 100% sheep Feta in the oven ready dish, add a drizzle of olive oil and bake in the oven at 380F for ~15min.

Top with fresh cracked black pepper and fresh basil.

For a twist, serve with balsamic glaze, honey, or cherry tomato jam, on a crusty baguette.

Or, add to your favourite pasta dish, such as spaghetti Bolognese or cacciatore.

Discover these cheeses and many others at the Moncton Market every Saturday. The selection varies each week. Contact us for availability.
